Spelt is said to be easier on digestion due to the lower gluten contain of the grain. As more and more people are dealing with gluten sensitivity, spelt offers a great alternative to wheat in both the grain and flour form, and although it does still contain gluten, it seems to be tolerated more easily than wheat.

Cooking Spelt Grain:

Cooking the spelt grain is simple following the 1 cup grain to 2 cups water and cooking for 45-50 minutes. We recommend soaking overnight before cooking. Cooked spelt grain can be added to soups, salads and casseroles for extra nutrition.
