Lecithin has been traditionally used as a health supplement to support fat metabolism. This is due to it having high levels of choline which is known to assist in the dissolving of fat and cholesterol and to regular kidney, liver and gall bladder function. For this reason it is often used as a support for people who are having troubles processing fats or who have compromised liver and gall bladder function.

Soy lecithin is extracted from soy bean oil and is also used in many food applications as a natural emulsifier or stabilizer.

In the Kitchen:

In granule form it can be sprinkled over cold foods such as salads or breakfast cereals, or in drinks (just mix into water, juice or smoothies), and although the granules usually won’t dissolve rest assured they are easy to consume and not unpleasant to taste.

Facts about Soy Lecithin:

Lecithin itself was first isolated by French Chemist Theodore Gobley in 1845 from egg yolks, naming it lecithine in 1850. The word lekithos is ancient Greek for ‘egg yolk’.

Lecithin has very low solubility in water.

The health benefits of soy lecithin are essentially do with fat metabolism. The granule form is traditionally used as a supplement to lower levels of bad cholesterol and triglycerides, whilst increasing HDL’s in the body, otherwise known as good cholesterol. Lecithin is also said to support nervous system and circulatory health.

Store: Keep in an airtight container in a cool, dry place, away from direct sunlight. In warm climates, refrigeration is recommended.
