Guar gum is one of the best thickening, emulsifying and stabilizing additives used in commercial food processing. Guar gum is said to have 8 times the thickening power of cornstarch and is used to make ice-cream, jams, jellies, sauces, dressings and in baking mixes. It is also used in paper manufacturing, textiles, printing, cosmetics and pharmaceuticals.

A little history for a little bean:

The guar bean (also known as the cluster bean) is said to be native to India, where the young beans are used as a vegetable. They are also used as a livestock feed, and of course to produce the guar gum.
