Caster sugar is a white free flowing crystalline sugar with a characteristic sweet flavour and aroma. Traditionally used for baking, our caster sugar is made from Australian raw sugar in Northern New South Wales.

Caster is the sugar of choice when making home made jams, for dusting donuts or for making a deliciously sweet pavlova.  In fact, it is the caster sugar in pavlova that brings the shiny finished look to the egg whites.

Caster sugar is perfect for making fluffy, whipped desserts such as souffles, mousses or meringues, as well sorbets and custards or baking cakes or cookies. We recommend it in our Luscious Lemon Coconut Cake.

Interesting Facts About Caster Sugar:

Caster sugar is actually the British term for a fine sugar. The term caster sugar was born because the sugar granules were tiny enough to be sprinkled through a dispenser known as a “caster.”

Caster sugar has such a fine grain that it dissolves almost instantly in liquid. Its texture is only a little thicker than confectioner’s sugar, yet finer than table sugar.
