Brown sugar contains 95 per cent sucrose and 5 per cent molasses. The molasses gives it the lovely toffee flavour and moistness however there are no nutritional benefits when compared with white sugar. Great for baking, brown sugar makes cookies soft and chewy and helps cakes and pastries to stay moist. It also brings a beautiful caramel flavour to any recipe.
