Bourghal (also known as bulgur) is a form of cracked wheat or groats that has been around for thousands of years being an integral part of the ancient Middle Eastern diet.  The process of making wheat into boughal is said to have originated in the Mediterranean region where by the grain is parboiled, dried and then cracked or ground prior to being eaten. This process leaves it with a grainy texture that is similar to couscous, with a slightly nutty flavour.

Bourghal is most notably known as an ingredient in the very popular middle eastern dish ‘Tabbouleh’, but with its tender and chewy texture, it also makes a great pilaf.

Interesting Facts about Boughal:

Bourghal wheat was used to simulate sand when Owen Wilson was shown in an oversize hourglass in the movie “Night at the Museum—Battle of the Smithsonian”.

Bourghal has been called by many names. The Romans called it cerealis; Israelites used the name dagan and in other Middle Eastern countries it was called it arisah, which is how it was referred to in the Bible.
