Borlotti beans are a deliciously earthy and nutty tasting bean that originated in Italy and are a variety of cranberry beans, which is where their gorgeous purple mottled colour comes from. Borlotti beans look a lot like pinto beans but have a chestnut-like flavour and a more creamy texture. These colourful beans are a popular favourite in many old world as well as modern recipes and are great on their own with a little olive oil and dressing.

Health Benefits of Borlotti beans

Borlotti beans are a rich source of cholesterol lowering digestive fibre, which is also important in maintaining healthy blood sugar.  They are very high in energy giving protein and have a range of minerals including folate, manganese, iron, copper and potassium and are very low in sodium.

Cooking with Borlotti beans

As with all legumes, they are best soaked first in the fridge overnight before cooking. To cook add 1 cup of beans to 3 cups of water, bring to the boil then reduce to a simmer for about 1.5 hours.  Borlotti beans make a great protein rich addition to salads, soups, casseroles and stir-fry’s.  The taste great when cooked and blended with olive oil, garlic and your favourite herbs and spices to use as a spread or dip.

How to cook borlotti beans: Soak overnight, drain and replace with cool water. Simmer on the stove for 60 minutes or until tender.
