Black turtle beans, also known as black beans, Spanish or Mexican beans, are thought to have originated in southern Mexico and Central America. Beneath their jet-black coating is a cream-colored flesh with a unique, almost mushroom-like flavor. Black turtle beans are often referred to as the vegetarians choice of legume owing to their high nutrient content. They are full of anti-oxidants known as flavenols coming from their dark colouring, that many other beans do not have.

How to cook black beans: Soak overnight, drain and replenish with fresh cold water. Place on stove and simmer, tilting the lid slightly to allow steam to escape, allowing time to cook for up to 90 minutes, or until tender.
