Agar Agar is a vegetarian gelatin substitute coming from red algae, that has been traditionally used in dairy free and vegan recipes as a thickening agent in making jams, jellies, puddings and sauces. Agar Agar is flavourless to taste.
Cooking with Agar Agar:
The general rule of thumb for agar agar is to use 1 teaspoon to thicken 1 cup of liquid.
Dissolve 1 teaspoon of agar agar powder with 4 tablespoons of water. Bring to the boil over medium heat and allow to simmer for around 5 minutes.
Mix the agar and water mixture in with the rest of your ingredients and then put aside to set (the agar will set as the ingredients cool).
Important: Be careful not to add your agar agar to cold or cool foods as it can set too quickly.
