Coconut sugar (also known as coconut sap sugar, or coconut palm sugar), is produced from the fresh sap of the cut flower buds of the coconut palm, and not from the coconut itself. The sap is collected or ‘tapped’ each day, boiled in large shallow pans to evaporate the water and then concentrated by drying to remove any residual moisture.

Coconut sugar contains trace amounts of the minerals iron, zinc, calcium and potassium, along with some short chain fatty acids, polyphenols and antioxidants. These are not in huge quantities but more than what you will find in regular table sugar. Besides this, in terms of the quantities of sucrose and fructose that make up coconut sugar, it is very similar to that of table sugar, with the main difference being the source and is also that coconut sugar is slightly lower on the Glycemic Index (GI).

Coconut sugar has a caramel like flavour and is just slightly less sweet to taste than raw sugar.

Coconut Sugar in the Kitchen:

Coconut sugar can be used as a alternative in cooking and baking to regular white or raw sugar. Some research has suggested it is healthier due to the nutrient content, and others say it makes little difference. In saying this, you can use coconut sugar to sweeten up porridge, sprinkle on cereal or add to your cakes, muffins and cookies.
